Don&#8217;t like pork? Use chicken. One chili pepper isn&#8217;t hot enough? Use three. Pretty much any vegetables will work as well. Just keep in mind the texture you wish to achieve and decide at which point they should go in the pot to cook.<\/p>\n<p>I&#8217;ve served it here in its broth much like a hot pot, though you could certainly thicken it into a sauce and plate it over rice if you eat grains.<\/p>\n<p><strong>Time: 30 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>2 teaspoons extra-virgin coconut oil<\/address>\n<address>1 pound pork tenderloin \u2013 sliced<\/address>\n<address>1 teaspoon salt<\/address>\n<address>\u00bd teaspoon fresh ground black pepper<\/address>\n<address>\u00bd cup chicken stock<\/address>\n<address>14 ounce can pineapple chunks \u2013 juice reserved<\/address>\n<address>1 tablespoon freshly grated ginger<\/address>\n<address>1 red chili pepper \u2013 thinly sliced<\/address>\n<address>1 teaspoon five-spice powder<\/address>\n<address>1 tablespoon soy sauce<\/address>\n<address>1 tablespoon sherry vinegar<\/address>\n<address>1 green bell pepper \u2013 seeded and sliced<\/address>\n<address>15 ounce can baby corn \u2013 drained<\/address>\n<address>\u00bd cup flat-leaf parsley<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Heat the coconut oil in a suitable pot or Dutch oven on medium-high. Season the pork with the salt and pepper, cooking for two minutes on each side or until lightly browned.<\/p>\n<p>Add the stock, pineapple juice, ginger, chili, five spice, soy sauce and vinegar. Bring to a boil on high.<\/p>\n<p>Stir in the bell pepper and baby corn.
