You could use fish filets if you&#8217;re very carefully cover them with the sauce and turn once during cooking. Cheeks are far easier.<\/p>\n<p>As for the onion seeds, they do add taste, texture and a great appearance. You can find them at most spice shops, especially ones specializing in Indian cuisine. If you can&#8217;t get your hands on some, the dish will work without them, though do try.<\/p>\n<p><strong>Time: 20 minutes<\/strong><\/p>\n<p><strong>Serves: 2<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>1 tablespoon ghee, butter or extra-virgin coconut oil<\/address>\n<address>1 teaspoon onion seeds<\/address>\n<address>2 fresh red chili peppers \u2013 thinly sliced<\/address>\n<address>2 cloves garlic \u2013 thinly sliced<\/address>\n<address>1 large onion \u2013 thinly sliced<\/address>\n<address>1 tomato \u2013 thinly sliced<\/address>\n<address>2 tablespoons shredded coconut (unsweetened)<\/address>\n<address>1 teaspoon kosher salt<\/address>\n<address>1 teaspoon ground coriander<\/address>\n<address>8 ounces pickerel cheeks<\/address>\n<address>\u00bd cup water<\/address>\n<address>1 tablespoon fresh lime juice<\/address>\n<address>2 tablespoons chopped cilantro<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a <a href=\"http:\/\/en.wikipedia.org\/wiki\/Karahi\" target=\"_blank\">karahi<\/a> or small, deep pan on medium heat and add the ghee.<\/p>\n<p>When the ghee is hot, add the onion seeds, peppers and onion, stirring occasionally for five minutes.<\/p>\n<p>Add the tomato, coconut, salt and ground coriander and stir well.<\/p>\n<p>Gently fold in the pickerel cheeks and cook for two minutes, carefully stirring a few times.<\/p>\n<p>Carefully stir in the water, lime juice and cilantro, cooking for two more minutes.<\/p>\n<p>Remove from heat and serve immediately.<\/p>\n<p><a href=\"http:\/\/www.kevskitchen.com\/wp-content\/uploads\/2013\/02\/Pickerel-PIquant.pdf\" target=\"_blank\">Get the PDF and nutrition info<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>This one&#8217;s definitely got an Indian flavour profile, though using fresh, Manitoba pickerel keeps it local.
