The bright flavours of the cilantro and lime juice perfectly balance the richness of the coconut milk. I&#8217;ve used halibut filets here because they stand up well to turning in the pan after being sliced, though almost any\u00a0<a href=\"http:\/\/www.oceanwise.ca\" target=\"_blank\">OceanWise<\/a>\u00a0fish would taste great.<\/p>\n<p><strong>Time: 20 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>1 tablespoon extra-virgin olive oil<\/address>\n<address>1 pound halibut filets &#8211; cut into 1\u201d slices<\/address>\n<address>\u00be teaspoon kosher salt<\/address>\n<address>\u00be teaspoon fresh ground black pepper<\/address>\n<address>1 clove garlic<\/address>\n<address>14 ounce can light coconut milk<\/address>\n<address>1 cup cilantro leaves \u2013 loosely packed<\/address>\n<address>1 tablespoon fresh lime juice<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a pan just wide enough to hold the fish in one layer on medium-high heat and add the olive oil.<\/p>\n<p>Season the fish slices with a \u00bd teaspoon each of the salt and pepper.<\/p>\n<p>Add the garlic to the pan and stir for thirty seconds.<\/p>\n<p>Place the fish in the pan and cook for one minute. Turn the slices over and cook for an additional minute.<\/p>\n<p>Pour in the coconut milk and bring to a boil. Reduce the heat to simmer for two minutes.<\/p>\n<p>Remove the pan from heat, then carefully stir in the cilantro leaves, lime juice and the balance of the salt and pepper.
