The chicken is cooked skin-side down first to give it some colour while the balance of the cooking is essentially done by steam.<\/p>\n<p><strong>Time: 30 minutes<\/strong><\/p>\n<p><strong>Serves: 2<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>1 tablespoon extra-virgin olive oil<\/address>\n<address>2 bone-in chicken breasts<\/address>\n<address>\u00bd teaspoon kosher salt<\/address>\n<address>\u00bd teaspoon fresh ground black pepper<\/address>\n<address>1 cup chicken stock<\/address>\n<address>2 teaspoons fresh thyme \u2013 finely chopped<\/address>\n<address>1 cup red seedless grapes \u2013 halved<\/address>\n<address>1 cup green seedless grapes &#8211; halved<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a heavy cast pan on medium heat and add the olive oil.<\/p>\n<p>Season both sides of the chicken breast with the salt and pepper.<\/p>\n<p>Place the chicken in the pan skin-side down and cook for five minutes.<\/p>\n<p>Turn the chicken skin-side up, add the stock and thyme, then bring to a boil. Reduce the heat to simmer and cook covered for ten minutes or until the internal temperature of the chicken reaches 155F.<\/p>\n<p>Uncover the chicken and return heat to medium for five minutes to reduce the liquid.<\/p>\n<p>Add the grapes and cook for two minutes, stirring occasionally.<\/p>\n<p>Plate the chicken surrounded by the grapes and pour over the pan juice.
