This Thai-inspired soup has very few cooking steps and is a wonderful way to warm up on a chilly day. You can adjust the heat level quite simply by adding another pepper for more or additional coconut milk for less. If you can find fresh curry leaves, add a few in the first step for even more depth of flavour. One quick note: Taste the soup before adding the salt. If you are using commercially-prepared stock, the salt may not be needed.<\/p>\n<p><strong>Time: 30 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>5 cups chicken stock<\/address>\n<address>1 pound boneless-skinless chicken thighs \u2013 cubed to \u00bd inch<\/address>\n<address>1 red chili pepper \u2013 seeded and halved lengthwise<\/address>\n<address>4\u201d piece lemongrass base \u2013 cut lengthwise into four<\/address>\n<address>2 teaspoons fresh grated ginger<\/address>\n<address>\u00bd cup light coconut milk<\/address>\n<address>1 teaspoon sriracha<\/address>\n<address>1 teaspoon kosher salt<\/address>\n<address>6 green onions \u2013 sliced<\/address>\n<address>\u00bd cup cilantro leaves<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a large pot on high heat. Add the stock, chicken, chili, lemongrass and ginger. Bring to a near boil, then reduce heat to simmer for ten minutes.<\/p>\n<p>Stir in the coconut milk, sriracha and salt (if required). Simmer for five minutes.<\/p>\n<p>Remove from heat, remove the lemongrass, then stir in the onions and cilantro leaves.
