The speed at which this refreshing, yet filling soup comes together is simply astounding and the balance of flavours developed in such a short time still shocks me.<\/p>\n<p><strong>Time: 20 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>5 cups water<\/address>\n<address>4 teaspoons dashi granules<\/address>\n<address>2 leeks \u2013 light-coloured portion thinly sliced \u2013 green discarded<\/address>\n<address>8 ounces oyster mushrooms \u2013 sliced<\/address>\n<address>8 ounces pork tenderloin \u2013 thinly sliced<\/address>\n<address>\u00bd cup soy sauce<\/address>\n<address>2 tablespoons mirin<\/address>\n<address>8 ounces bean sprouts<\/address>\n<address>6 green onions &#8211; sliced<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place the water and dashi in a suitable pot over high heat and bring to a boil.<\/p>\n<p>Add the leeks and mushrooms, reduce heat and simmer for five minutes.<\/p>\n<p>Stir in the pork, soy sauce and mirin.
