This speedy version brings loads of flavour even without extended simmering. If lupini beans are too firm for your liking, use another variety such as kidney beans.<\/p>\n<p><strong>Time: 40 minutes<\/strong><\/p>\n<p><strong>Serves: 6<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>8 ounces semi-dry chorizo \u2013 sliced<\/address>\n<address>1 large onion \u2013 chopped<\/address>\n<address>4 cloves garlic \u2013 finely sliced<\/address>\n<address>2 Roma tomatoes \u2013 chopped<\/address>\n<address>4 cups butternut squash \u2013 peeled and cubed to \u00bd\u201d<\/address>\n<address>2 bay leaves<\/address>\n<address>2 teaspoons paprika<\/address>\n<address>1 teaspoon ground cumin<\/address>\n<address>1 \u00bd teaspoons kosher salt<\/address>\n<address>\u00bd teaspoon fresh ground black pepper<\/address>\n<address>19 ounce can large beans such as lupini or Romano\u2013 rinsed and drained<\/address>\n<address>4 cups water<\/address>\n<address>6 green onions &#8211; sliced<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a large pot in medium-high and add the chorizo. Stir occasionally for seven minutes, then add the onion and garlic, stirring occasionally for another five minutes.<\/p>\n<p>Add all remaining ingredients with the exception of the green onions.
