One of the techniques that makes this salad different than many you may have tried is rather than dressing the greens, they are left bare and the protein becomes the flavour vehicle. Mixing the cubes of pork into the salad while eating makes the greens taste fresher than they would if they were dressed beforehand.<\/p>\n<p><strong>Time: 20 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>1 tablespoon Dijon mustard<\/address>\n<address>\u00be\u00a0 teaspoon kosher salt<\/address>\n<address>\u00bd teaspoon fresh ground black pepper<\/address>\n<address>1 pound pork tenderloin \u2013 cubed to \u00be\u201d<\/address>\n<address>4 tablespoons extra-virgin olive oil<\/address>\n<address>2 tablespoons fresh lime juice<\/address>\n<address>\u00bc teaspoon stevia<\/address>\n<address>\u00bd cup flat leaf parsley \u2013 chopped<\/address>\n<address>1 red onion \u2013 finely sliced<\/address>\n<address>8 cups leaf lettuce \u2013 torn<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>In a medium bowl, mix together the Dijon, \u00bd teaspoon of the salt and \u00bc teaspoon of the pepper. Add the pork, tossing to coat.<\/p>\n<p>Place a heavy cast pan on medium-high heat and add one tablespoon of the olive oil. When the oil is hot, add the pork mixture, stirring occasionally for seven minutes or until the pork is browned and cooked through then remove from heat and set aside.<\/p>\n<p>While the pork is cooking, in a medium bowl, mix together the remaining salt and pepper along with the lime juice and stevia. Whisk in the remaining olive oil to make a dressing.
