The simplified hummus is a nice compliment to the spiced bison and letting your guests make wraps with butter lettuce leaves adds a nice touch of interaction with the food. I didn&#8217;t list the lettuce leaves in the recipe, though it is a fun way to present this combination.<\/p>\n<p><strong>Time: 25 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>1 pound ground bison<\/address>\n<address>2 large shallots \u2013 chopped<\/address>\n<address>2 tablespoons tomato paste<\/address>\n<address>1 teaspoon kosher salt<\/address>\n<address>\u00bc teaspoon cinnamon<\/address>\n<address>\u00bc teaspoon ground cumin<\/address>\n<address>\u00bc teaspoon chili powder<\/address>\n<address>\u00bc teaspoon turmeric<\/address>\n<address>\u00bc teaspoon fresh ground black pepper<\/address>\n<address>\u00bc cup fresh mint &#8211; chopped<\/address>\n<address>14 ounce can chickpeas \u2013 rinsed and drained<\/address>\n<address>1 tablespoon fresh lemon juice<\/address>\n<address>1 clove garlic &#8211; very finely chopped or crushed<\/address>\n<address>\u00bd teaspoon paprika<\/address>\n<address>\u00bc cup water<\/address>\n<address>2 tablespoons extra-virgin olive oil<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>For the bison, preheat a heavy cast pan on medium-high then add the bison, stirring and breaking apart for three minutes.<\/p>\n<p>Add the shallots and cook, stirring often for another three minutes.<\/p>\n<p>Stir in the tomato paste, \u00bd teaspoon of salt, the cinnamon, cumin, chili, turmeric and pepper, cooking for five more minutes.<\/p>\n<p>Remove from heat and top with the mint.<\/p>\n<p>For the hummus, place the chickpeas, remaining \u00bd teaspoon of salt, the lemon juice, garlic, paprika and water in a food processor.
