The problem isn&#8217;t pumpkin itself and you definitely don&#8217;t have to overcook or puree it into to make it edible. In fact, this quick curry presents pumpkin in a new light for many in that it&#8217;s cooked to the point of being tender without turning to mush.<\/p>\n<p><strong>Time: 45 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>2 tablespoons butter<\/address>\n<address>3 cloves garlic &#8211; very finely chopped or crushed<\/address>\n<address>1 teaspoon chili powder<\/address>\n<address>1 teaspoon garam masala<\/address>\n<address>1 teaspoon ground coriander<\/address>\n<address>\u00bd teaspoon cinnamon<\/address>\n<address>1 onion \u2013 chopped<\/address>\n<address>4 cups pumpkin flesh \u2013 cubed to 1\u201d<\/address>\n<address>2 tomatoes \u2013 chopped<\/address>\n<address>1 teaspoon kosher salt<\/address>\n<address>\u00bc teaspoon black pepper<\/address>\n<address>\u00bc cup chopped cilantro<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Preheat a heavy cast pan on medium-high then add the butter.<\/p>\n<p>Once the butter is hot, add the garlic, chili, garam masala, coriander and cinnamon, stirring for one minute.<\/p>\n<p>Add the onion and cook, stirring often for three minutes.<\/p>\n<p>Stir in the pumpkin and tomato. When it comes to a boil, reduce the heat to simmer, stirring occasionally for twenty-five minutes.<\/p>\n<p>Remove from heat, then stir in the salt and pepper.
