Who could possibly pass up dry-cured sausage made from acorn-fed pigs? I prepare this traditional Spanish combination of apples and chorizo with cider vinegar, though you may prefer the additional sweetness of apple cider. Be sure to visit <a href=\"http:\/\/www.segoviatapasbar.com\" target=\"_blank\">Segovia Tapas Bar &amp; Restaurant<\/a> for some of the outstanding food that inspired this dish.<\/p>\n<p><strong>Time: 15 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>1 tablespoon extra-virgin olive oil<\/address>\n<address>8 ounces dry or semi-dry chorizo \u2013 sliced<\/address>\n<address>\u00bd cup cider vinegar<\/address>\n<address>2 bay leaves<\/address>\n<address>4 red apples \u2013 cored and cut into \u00bd\u201d wedges<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a frying pan over medium high heat and add the olive oil.<\/p>\n<p>When the oil is hot, place the chorizo slices in the pan in a single layer. Cook for two minutes, then turn the slices and cook for an additional two minutes.<\/p>\n<p>Add the cider vinegar and bay leaves to the pan. Reduce heat and simmer for two minutes.<\/p>\n<p>Place the apples in the pan, tossing gently to coat with the pan juices.
