The concepts though, are rarely new and even if I think they are, they&#8217;ve probably been done before. I create the dishes here without following somebody else&#8217;s recipe, yet the framework didn&#8217;t magically appear in my tiny brain.<\/p>\n<p>This recipe has been blatantly and unashamedly cribbed from <a href=\"http:\/\/en.wikipedia.org\/wiki\/Fergus_Henderson\" target=\"_blank\">Fergus Henderson&#8217;s<\/a>\u00a0drool-inducing book &#8220;<a href=\"http:\/\/www.amazon.com\/gp\/product\/0060585366\/ref=as_li_ss_tl?ie=UTF8&amp;camp=1789&amp;creative=390957&amp;creativeASIN=0060585366&amp;linkCode=as2&amp;tag=4nne-20\" target=\"_blank\">The Whole Beast &#8211; Nose to Tail Eating<\/a>&#8220;. To make it fit within the Kev&#8217;s Kitchen time and simplicity guidelines, I scaled down the quantities and took a few shortcuts in the preparation, though more than just the framework for my new favourite belongs to Mr. Henderson.<\/p>\n<p><strong>Time: 45 minutes<\/strong><\/p>\n<p><strong>Serves: 6<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>1 tablespoon extra-virgin olive oil<\/address>\n<address>1 large onion \u2013 diced<\/address>\n<address>1 leek \u2013 light portion finely sliced and tops discarded<\/address>\n<address>3 cloves garlic &#8211; very finely chopped or crushed<\/address>\n<address>8 thick slices bacon \u2013 sliced into matchsticks<\/address>\n<address>2 cups chopped or diced tomatoes with their juice<\/address>\n<address>8 cups pumpkin \u2013 peeled and cubed to 1\u201d<\/address>\n<address>1 tablespoon thyme \u2013 finely chopped<\/address>\n<address>1 tablespoon parsley \u2013 finely chopped<\/address>\n<address>8 cups chicken stock<\/address>\n<address>\u00bd teaspoon &#8211; fresh ground black pepper<\/address>\n<address>\u00bd teaspoon kosher salt<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a large pot containing the olive oil on medium high heat. Add the onion, leek and garlic, stirring occasionally for five minutes.<\/p>\n<p>Add the bacon and continue to stir occasionally for five more minutes.<\/p>\n<p>Put the tomato in the pot and continue to cook for another ten minutes.<\/p>\n<p>Add the pumpkin, thyme and parsley, stirring occasionally for five minutes.<\/p>\n<p>Stir in the stock and turn the heat to high until a boil is reached. Reduce the heat to low and simmer for fifteen minutes.<\/p>\n<p>Stir in the pepper and taste to see if the salt is required.
