I used bison sirloin, though the flavours would also work very well with pork, beef, chicken or shellfish.<\/p>\n<p><strong>Time: 20 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>1 pound sirloin \u2013 thinly sliced<\/address>\n<address>2 tablespoons soy sauce<\/address>\n<address>1 tablespoon fish sauce (nouc nam)<\/address>\n<address>1 tablespoon white vinegar<\/address>\n<address>1 teaspoon crushed red chili pepper<\/address>\n<address>1 teaspoon stevia<\/address>\n<address>1 tablespoon coconut oil<\/address>\n<address>3 leeks \u2013 lighter coloured base thinly sliced and stalks discarded<\/address>\n<address>1 savoy cabbage &#8211; thinly sliced<\/address>\n<address>\u00bd cup cilantro \u2013 roughly chopped<\/address>\n<address>Sriracha chili-garlic sauce to serve<\/address>\n<p>&nbsp;<\/p>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place the sirloin in a bowl and toss with the soy sauce, fish sauce, vinegar, chili and stevia. Set this aside to marinade while preparing the other ingredients.<\/p>\n<p>Put a wok on high heat and add the coconut oil.<\/p>\n<p>When the oil is very hot, add the beef and marinade, stir-frying for two minutes.<\/p>\n<p>Add the cabbage and leeks to the wok, tossing often for five more minutes.<\/p>\n<p>Remove the wok from heat, add the cilantro and toss to distribute it evenly.
