This recipe is a simplified version of the traditional onion-based dish and uses blend of orange zest, cinnamon and cloves to liven things up. Swap out the chops for your protein of choice using the same vegetable and spice mixture. Chicken or fish would be excellent choices.<\/p>\n<p><strong>Time: 30 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>2 teaspoons extra-virgin olive oil<\/address>\n<address>4 bone-in pork chops<\/address>\n<address>\u00be teaspoon kosher salt<\/address>\n<address>\u00bd teaspoon fresh ground black pepper<\/address>\n<address>2 onions \u2013 halved and sliced<\/address>\n<address>6 cloves garlic &#8211; very finely chopped or crushed<\/address>\n<address>3 large tomatoes \u2013 diced<\/address>\n<address>2 stalks celery \u2013 sliced<\/address>\n<address>2 teaspoons fresh oregano \u2013 finely chopped<\/address>\n<address>\u00bd teaspoon orange zest<\/address>\n<address>\u00bd teaspoon cinnamon<\/address>\n<address>\u215b teaspoon ground cloves<\/address>\n<address>2 tablespoons parsley<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a large, deep pan on high heat and add the oil.<\/p>\n<p>Season both sides of the pork chops with a half teaspoon of salt and quarter teaspoon of pepper.<\/p>\n<p>Cook the chops for two minutes on each side then add all remaining ingredients except parsley.
