It&#8217;s not, though it is late summer in Manitoba and that means we have plenty of local leeks and pickerel. This easy appetizer makes a great first course for your very own hundred mile dinner.<\/p>\n<p><strong>Time: 15 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>2 tablespoons butter<\/address>\n<address>4 cloves garlic \u2013 very finely chopped or crushed<\/address>\n<address>8 ounces pickerel cheeks \u2013 patted dry between paper towel<\/address>\n<address>\u00bc teaspoon kosher salt<\/address>\n<address>\u00bc teaspoon fresh ground black pepper<\/address>\n<address>4 leeks \u2013 lighter coloured base sliced (tops discarded)<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Heat a pan on medium heat then add the butter and garlic.<\/p>\n<p>Sprinkle the pickerel with the salt and pepper and place in the pan, stirring occasionally for three minutes or until just beginning to brown.
