The real Indian food lovers will want to add another one or two.<\/p>\n<p><strong>Time: 20 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>1 pound carrots \u2013 peeled and sliced \u00bc\u201d thick<\/address>\n<address>4 teaspoons extra-virgin olive oil<\/address>\n<address>1 clove garlic \u2013 very finely chopped or crushed<\/address>\n<address>1 red chili pepper \u2013 seeded and finely chopped<\/address>\n<address>\u00bd teaspoon kosher salt<\/address>\n<address>\u00bd teaspoon ground cumin<\/address>\n<address>\u00bd teaspoon ground coriander<\/address>\n<address>1 tablespoon Italian parsley &#8211; chopped<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Bring a pot of water to a boil over high heat while preparing the carrots. Once the water boils, add the carrots and return to a boil. Reduce the heat to simmer uncovered for five minutes.<\/p>\n<p>While the carrots are simmering, place a small pan over medium heat and add the oil. Once the oil is hot, add the remainder of the ingredients except parsley to the pan. Stir this spice mixture constantly for one minute and remove it from the heat.<\/p>\n<p>Once the carrots are finished simmering, remove them from the heat, drain and rinse well with cold water to cool.<\/p>\n<p>Put the carrots in a bowl and toss them with the spice mixture and parsley.
