I&#8217;ll actually &#8220;cook&#8221; something again soon (like the strip loin I just dry-aged, though that&#8217;s outside the scope of Kev&#8217;s Kitchen). For now, it&#8217;s this astoundingly simple salad with only one real prep step. If you find arugula too bitter, use spinach or even Romaine. Also be sure to use good quality canned beans (small white beans are great in this also) or they&#8217;ll be mushy.<\/p>\n<p><strong>Time: 15 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>4 cups arugula<\/address>\n<address>2 6-ounce cans water-packed tuna \u2013 drained<\/address>\n<address>1 19-ounce can white kidney beans \u2013 rinsed and drained<\/address>\n<address>\u00bd red onion \u2013 very thinly sliced<\/address>\n<address>2 tablespoons capers \u2013 drained<\/address>\n<address>4 teaspoons extra-virgin olive oil<\/address>\n<address>1 teaspoon wine vinegar<\/address>\n<address>1 teaspoon fresh lemon juice<\/address>\n<address>\u00bd teaspoon crushed red chili pepper<\/address>\n<address>\u00bc teaspoon kosher salt<\/address>\n<address>\u00bc teaspoon freshly ground black pepper<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place all ingredients in a suitably sized bowl and toss gently to evenly combine and coat.
