Neither have the temperance folks for that matter. I served this up with tender, juicy, grass-fed rib-eyes and it made for a perfect meal. If you really want to keep it vegetarian while upping the protein factor, add some drained canned chick peas or white beans.<\/p>\n<p><strong>Time: 15 minutes (plus chilling)<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>4 tomatoes \u2013 cored and roughly chopped<\/address>\n<address>1 celery stalk \u2013 roughly chopped<\/address>\n<address>1 red bell pepper \u2013 seeded and roughly chopped<\/address>\n<address>\u00bd cucumber \u2013 roughly chopped (not peeled)<\/address>\n<address>\u00bd red onion \u2013 roughly chopped<\/address>\n<address>8 basil leaves \u2013 roughly torn<\/address>\n<address>4 cloves garlic \u2013 very finely chopped or crushed<\/address>\n<address>2 tablespoons extra-virgin olive oil<\/address>\n<address>2 tablespoons red wine vinegar<\/address>\n<address>1 teaspoon kosher salt<\/address>\n<address>\u00bd teaspoon fresh ground black pepper<\/address>\n<address>4 tablespoons parmesan cheese &#8211; shaved<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Put the tomatoes and celery into your food processor and pulse until nearly pureed. Pour this mixture into a bowl.<\/p>\n<p>Put the bell pepper, cucumber, onion and basil leaves into the food processor, pulsing until almost finely chopped. Do not over-process as these ingredients provide the texture and variety of colour. Pour this mixture into the bowl with the tomato puree.<\/p>\n<p>Stir in the olive oil, vinegar, salt and pepper.
