This simple salad inspired by my gym buddy, Johnny &#8220;\u00c9touff\u00e9e&#8221;, is a perfect example. There&#8217;s a huge variety of balsamic vinegar out there from thin and acidic to sweet and almost syrupy. Here&#8217;s a great excuse to head down to your local gourmet food store to sample a few.<\/p>\n<p><strong>Time: 10 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>8 cups baby spinach<\/address>\n<address>1 cup fresh blueberries<\/address>\n<address>1 cup fresh raspberries<\/address>\n<address>1 tablespoon balsamic vinegar<\/address>\n<address>\u00bc teaspoon freshly ground black pepper<\/address>\n<address>\u00bc cup feta cheese &#8211; crumbled<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Cover either a large bowl or individual serving bowls with the spinach then top evenly with the berries.<\/p>\n<p>Drizzle the balsamic vinegar over the salad and sprinkle it with the pepper.<\/p>\n<p>Sprinkle the cheese over the salad and serve immediately.<\/p>\n<p><a href=\"http:\/\/www.kevskitchen.com\/wp-content\/uploads\/2012\/07\/Berry-Feta-Salad.pdf\" target=\"_blank\">Get the PDF and nutrition info<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>When you have fresh, unprocessed ingredients, the most important thing is not to destroy their natural flavours.
