This salad uses an extra-quick version of a scratch-made curry paste that should bring even the doubters over to my side of the argument.<\/p>\n<p><strong>Time: 15 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>2 tablespoons extra-virgin olive oil<\/address>\n<address>1 tablespoon ground coriander<\/address>\n<address>1 tablespoon ground cumin<\/address>\n<address>\u00bc teaspoon ground turmeric<\/address>\n<address>\u00bc teaspoon kosher salt<\/address>\n<address>\u00bc teaspoon stevia<\/address>\n<address>2 14-ounce cans chickpeas \u2013 rinsed and drained<\/address>\n<address>\u00bc teaspoon fresh grated ginger<\/address>\n<address>\u00bd jalepeno \u2013 seeded and finely chopped<\/address>\n<address>1 tomato \u2013 diced<\/address>\n<address>\u00bd cup fresh cilantro leaves &#8211; chopped<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Heat the oil in a small pot of frying pan over medium heat.<\/p>\n<p>Stir in the coriander, cumin turmeric, salt and stevia. Continue to stir for one minute then remove the pot from heat and set it aside.<\/p>\n<p>Mix the balance of the ingredients in a medium bowl.
