Who other than Cook Kevin would put lettuce in soup though? You may not believe it, but I was actually sober when I decided to stir in some romaine and it works very well. Give it a try on a cool night and you&#8217;ll be glad you did!<\/p>\n<p><strong>Time: 30 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>1 tablespoon extra-virgin olive oil<\/address>\n<address>1 onion \u2013 chopped<\/address>\n<address>2 cloves garlic \u2013 finely chopped or crushed<\/address>\n<address>\u00bd teaspoon turmeric<\/address>\n<address>\u00bd teaspoon paprika<\/address>\n<address>\u215b teaspoon cayenne pepper<\/address>\n<address>2 Roma tomatoes \u2013 chopped<\/address>\n<address>1 14-ounce can chickpeas \u2013 rinsed and drained<\/address>\n<address>4 cups vegetable stock<\/address>\n<address>4 cups romaine lettuce \u2013 thinly sliced<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place a heavy pot on medium heat. Add the oil, onion, garlic, turmeric, paprika and cayenne. Stir occasionally for approximately five minutes or until the onion turns translucent.<\/p>\n<p>Add the tomatoes to the pot and continue to stir occasionally for another five minutes.<\/p>\n<p>Mix in the chickpeas and vegetable stock. Turn the burner to high and bring to a boil.
