Though the list of spices is lengthy, they are standard pantry issue and mixing them this way allows you to tailor the exact flavours to your preference. Experiment with the seasoning, have a beer or sangria and most of all have fun!<\/p>\n<p><strong>Time: 30 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>1 pound ground bison (or extra-lean ground beef)<\/address>\n<address>1 tablespoon chili powder<\/address>\n<address>1 \u00bd teaspoons ground cumin<\/address>\n<address>\u00bd teaspoon crushed red pepper<\/address>\n<address>\u00bd teaspoon paprika<\/address>\n<address>\u00bd teaspoon kosher salt<\/address>\n<address>\u00bd teaspoon fresh ground black pepper<\/address>\n<address>\u00bc teaspoon onion powder<\/address>\n<address>\u00bc teaspoon garlic powder<\/address>\n<address>\u00bc teaspoon dried oregano<\/address>\n<address>1 cup water<\/address>\n<address>2 Roma tomatoes \u2013 finely diced<\/address>\n<address>\u00bd cup densely packed cilantro leaves \u2013 chopped<\/address>\n<address>2 tablespoons red onion \u2013 finely chopped<\/address>\n<address>8 large lettuce leaves<\/address>\n<address>2 tablespoons reduced fat (not fat free) sour cream<\/address>\n<address>2 tablespoons jalapeno jack cheese \u2013 coarsely grated<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Heat a heavy cast pan on medium-high heat. Add the bison and cook until brown while crumbling into small pieces.<\/p>\n<p>Add all dry spices and water to the bison, mix well and continue to cook until the water has evaporated. Remove from heat.<\/p>\n<p>Mix the tomato, cilantro and onion to make a fresh salsa.<\/p>\n<p>Spoon the bison mixture evenly into the lettuce leaves, then top with the salsa mixture, sour cream and cheese.
