I&#8217;ve set up the salad portions for an entree, though you could use less and plate the scallops directly on top for a beautiful appetizer.<\/p>\n<p><strong>Time: 20 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>1 pound large sea scallops<\/address>\n<address>\u00bd teaspoon kosher salt<\/address>\n<address>\u00bd teaspoon fresh ground black pepper<\/address>\n<address>3 tablespoons extra virgin olive oil<\/address>\n<address>2 teaspoons fresh lemon juice<\/address>\n<address>8 cups herb salad or spring mix<\/address>\n<address>\u00bd cup Italian parsley leaves \u2013 torn<\/address>\n<address>\u00bd cup fresh mint leaves \u2013 torn<\/address>\n<address>\u00bd cup fresh basil leaves \u2013 torn<\/address>\n<address>6 green onions \u2013 sliced diagonally<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Preheat a heavy cast pan on high heat with one tablespoon of the olive oil.<\/p>\n<p>Sprinkle the scallops with \u00bc teaspoon of the salt and \u00bc teaspoon of the pepper. Place in the heated pan for two minutes on each side.
