This salad is a perfect example.<\/p>\n<p><strong>Time: 30 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>4 tablespoons extra-virgin olive oil<\/address>\n<address>1 pound boneless-skinless chicken breast<\/address>\n<address>\u00bd teaspoon ground cumin<\/address>\n<address>\u00bd teaspoon kosher salt<\/address>\n<address>\u00bc teaspoon fresh ground black pepper<\/address>\n<address>1 \u00bd tablespoons fresh lime juice<\/address>\n<address>1 tablespoon soy sauce<\/address>\n<address>\u215b teaspoon cayenne pepper<\/address>\n<address>1 head green leaf lettuce \u2013 washed and torn<\/address>\n<address>2 cups cherry tomatoes &#8211; quartered<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Preheat a heavy cast pan with one tablespoon of the olive oil on medium heat.<\/p>\n<p>Sprinkle both sides of the chicken with the cumin, black pepper and \u00bc teaspoon of the salt.<\/p>\n<p>Place the chicken in the pan, cooking for six minutes on one side. Turn the breasts and cook for an additional six minutes or until the internal temperature reaches 165F. Remove from heat and cover for five minutes.<\/p>\n<p>Make the dressing by whisking together the remaining three tablespoons of olive oil, \u00bc teaspoon of salt, lime juice, cayenne and soy sauce.<\/p>\n<p>Plate the lettuce and tomato, then slice the chicken breast. Place the chicken breast on top of the salad, drizzling both chicken and salad with the dressing.
