Why, bacon and eggs for breakfast, lunch and dinner! Even if you typically find curly endive (also known as fris\u00e9e or chicory) too bitter for your palette, give it a try in this great salad before deciding to substitute a more mild lettuce. The richness of the egg yolk and rendered bacon are the perfect balance to such a bold leafy green.<\/p>\n<p><strong>Time: 30 minutes<\/strong><\/p>\n<p><strong>Serves: 4<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>8 thick slices bacon \u2013 sliced into 1\u201d squares<\/address>\n<address>1 tablespoon white vinegar<\/address>\n<address>2 tablespoons extra virgin olive oil<\/address>\n<address>2 teaspoons wine vinegar<\/address>\n<address>1 clove garlic \u2013 finely chopped or crushed<\/address>\n<address>\u215b teaspoon kosher salt<\/address>\n<address>\u215b teaspoon fresh ground black pepper<\/address>\n<address>\u00bc teaspoon dried thyme<\/address>\n<address>1 head curly endive (fris\u00e9e) \u2013 leaves roughly torn and stalks discarded<\/address>\n<address>4 eggs<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Place the bacon in a cast frying pan over medium heat, stirring often.<\/p>\n<p>While the bacon is cooking, fill a deep pan half to two-thirds full of water, add the white vinegar and place it over high heat.<\/p>\n<p>With the bacon cooking and the water warming, whisk together the olive oil, wine vinegar, garlic, salt, pepper and thyme. Pour this dressing over the endive and toss to coat. Plate the salad in large bowls or on plates.<\/p>\n<p>Once the bacon is crisp, remove it from the pan with a slotted spoon and drain on paper towels.<\/p>\n<p>When the water reaches a boil, reduce the heat to a bare simmer. Break the eggs one at a time into a small bowl and pour from the bowl into the simmering water. Cook for approximately three minutes or until the white is just set. When the eggs are cooked, very carefully remove them one at a time with a slotted spoon and place on top of the salad.<\/p>\n<p>Season the eggs lightly with salt and pepper then sprinkle the salad with the bacon pieces.
