In fact you&#8217;ll likely be ready to bake the fish even before your oven reaches temperature. Try it drizzled with some <a href=\"http:\/\/www.delishproducts.com\/products.html\" target=\"_blank\">Delish Bajan Pepper Sauce<\/a> for a hit of heat. (Thanks for thinking of me while you were in Barbados, GGs!)<\/p>\n<p><strong>Time: 40 minutes<\/strong><\/p>\n<p><strong>Serves: 2<\/strong><\/p>\n<p><strong>Ingredients:<\/strong><\/p>\n<address>2 \u2013 6 ounce fish filets<\/address>\n<address>\u00bc teaspoon kosher salt<\/address>\n<address>\u00bc teaspoon fresh ground black pepper<\/address>\n<address>1 lime \u2013 half juiced \u2013 half thinly sliced<\/address>\n<address>2 bay leaves<\/address>\n<address>1 onion \u2013 thinly sliced<\/address>\n<address>2 cloves garlic \u2013 finely chopped or crushed<\/address>\n<address>2 tomatoes \u2013 cut into eighths<\/address>\n<address>2 tablespoons extra-virgin olive oil<\/address>\n<address>2 tablespoons water<\/address>\n<address>\u00a0<\/address>\n<p><strong>Preparation:<\/strong><\/p>\n<p>Preheat the oven to 400F.<\/p>\n<p>Place the fish filets into a baking dish, sprinkle with the salt and pepper, then drizzle with the lime juice.<\/p>\n<p>Top the fish with the bay leaves, onion, garlic, tomatoes, olive oil and water then bake uncovered for twenty-five minutes.<\/p>\n<p>Serve topped with the lime slices.<\/p>\n<p><a href=\"http:\/\/www.kevskitchen.com\/wp-content\/uploads\/2012\/03\/Caribbean-Fish.pdf\" target=\"_blank\">Get the PDF and nutrition info<\/a><\/p>\n","protected":false},"excerpt":{"rendered":"<p>The prep for this delicately-flavoured dish is incredibly simple.
